Take a step back into Johannesburg’s rich history when you dine at The Marshall. Located inside the Premier Hotel Mapungubwe on the corner of Marshall and Ferreira in the inner city, the restaurant is strategically positioned in the middle of the former mining district of the City of Gold.
The walls are adorned with black and white photos depicting scenes typical of the mining era, when the Gold Rush brought many people to the city, eagerly seeking fame and fortune. Blue tufted bank couches, shiny white subway tiles and the black and white checkerboard floor are defining features – clean, crisp and sophisticated.
THE FOOD AND DRINK
With an uncompromising commitment to serving only the highest quality food and wine, The Marshall believes in offering an exceptional dining experience, and value-for-money. From the AAA grade free range meat, to the freshest locally sourced produce; the finest olive oil to the French butter with a 2% higher fat content (82% vs 84% makes all the difference) – diners will enjoy only the best of the best.
Wines are handpicked by the owner, who enjoys discovering unique tastes and aromas. He believes in making good wine accessible to more people, at an affordable price.
Coffee is another highlight at The Marshall – 100% Arabica coffee beans blended and roasted in-house. All the way from Costa Rica, Guatemala and Tanzania, the coffee beans are Rainforest Alliance Certified™.
The menu includes light meals, burgers, salads, sandwiches, wraps and tapas (perfect for sharing). Signature dishes include a T-bone steak with pap and chakalaka, and Karoo certified lamb cutlets (did you know that to be truly Karoo certified, the lambs must feed on five different kinds of fynbos?).
The Marshall is ideal for your morning on-the-go coffee, work-while-you-eat business lunches or chill-after-a-long-day-at-work drinks. It is also a hot party venue, and will play host to wine and whisky tastings, jazz evenings and other special events.
Owner Pieter Bloem comes from a film industry background, and is also a veteran in the restaurant business, with going on 20 locations in Cape Town. His brands include Bootlegger Coffee Company, GoGo, Ou Meul Bakkery, Rockpool and The Eatery. The Marshall is his first restaurant in Johannesburg, with plans to expand significantly in the coming months.
It all began a short eight months ago, when Pieter posed a question to his social media following. A firm believer in the power of social media and the importance of personal engagement, Pieter is very active and responsive on his business social media accounts. He asked where Bootlegger should open in Johannesburg and received a flood of suggestions. A representative from Faircity Hotels and Apartments picked up on the post, and the rest is history. As the saying goes, “Strike while the iron is hot”.
Employing in the region of 800 people, Pieter is passionate about developing people. He hires people based on personality and not on the contents of a CV. Servers are put through their paces during a one and a half month training programme, designed to equip them to serve with confidence and skill. His right-hand man is testimony to this approach, having started his journey as a server, and then worked his way up the ranks.
Pieter is deeply rooted in South Africa and sees huge potential to continue growing his business to even greater heights. First Cape Town, now Johannesburg – where to next?
